Throughout this day of discovery you will learn interesting facts and trivia about the history surrounding the Domaine de Saint Aubin and its cultivation of sugarcane through to the distillation of rum.

 

The “L’Atelié du Rhum” or The Rum workshop at le Domaine de Saint Aubin, starts with an immersive discovery into the history of sugar, and the different stages involved in the process of transforming sugar cane into the sugar we find so readily available today. You will discover interesting facts about the different species of sugar cane that grows on the Island and get to taste the various sugar cane products that are produced here.

Your journey of discovery continues with an in-depth understanding into the processes used in the distillation of agricultural rum and it’s different varieties followed by some rum tasting.

Once you have mastered recognizing the different varieties of rum it’s time to proceed to the cocktail workshop where our barmen will demonstrate how to make 4 signature cocktails and the best part of this is that you get to enjoy them. After savouring those cocktails it’s time for lunch, as you make your way to the Saint Aubin Restaurant where our signature dishes are made, using our own products revolving around sugar and rum.

Future plans at the Domaine de Saint Aubin include the possibility for visitors to make their own island recipe rum with homemade ingredients and have the customs clarification for visitors to take the bottle home, this is well under way but not yet completed.

The Domaine de Saint Aubin – Since 1819
Located In the South of the island a few kilometers from Souillac, is the magnificent Domaine de Saint Aubin, the site of a beautiful 19th century colonial mansion. This was the home of the owners of the sugar plantation, and was built in 1819 out of wood from demolished ships. The staircase leading upstairs was arranged around a ship’s mast, and the attic frame is that of an old hull. In 1970, the owners decided to move the house a few hundred meters to its present location, the decision to do this was due to excessive noise pollution generated by an increasingly larger sugar factory. The house has been lived in by various administrators of the estate and is today part of the architectural heritage of Mauritius. It has been transformed into a restaurant and welcomes its visitors, lovers of local and authentic cuisine, to dine under its veranda and in its lounges. The old fireplace, a silent witness to its past history is still  the heart of the property. The sugar cane factory allows visitors to discover all the stages of sugarcane processing. During your visit at the estate, you can also wander through the greenhouses of Anthuriums and vanilla, take a botanical tour and enter the House of Vanilla, which showcases the production process of the famous aromatic pod, stroll  into the House du Rum to discover all the subtleties of the distillation process of an agricultural rum: rum Saint Aubin 1819. This traditional rum, made on site from the first juice of the cane, is aged in oak barrels and  is naturally clear however other ingredients can be added such as vanilla, coffee, coconut and spices to generate different flavours. This quality product is bottled using  traditional methods and marketed on the property.  A mini farm and playground has been set up for children in the garden allowing adults and children to benefit from what the estate has to offer.
